Serves: 1-2


250gm of pumpkin cut into 2-3 inch chunks

1 small onion chopped into chunks

1 medium carrot chopped into chunks

1 medium potato chopped into chunks

Table spoon of Sunflower or Coconut oil for frying

Small tin of coconut cream/milk

1 pouch of Vi Vietnamese Curry Sauce

Pinch of salt and pepper to taste



In a hot frying pan add in cooking oil, warm and add in onions to sauté.

Next add in the root vegetable and stir fry for 2minutes.

Add water just enough to cover vegetables, pinch of salt and pepper to taste and mix well.

Place lid over pan and turn heat down to medium/low and simmer until vegetables soften.

Add in Vi Vietnamese Curry sauce, stir gently and simmer for a further 1minute.

Add in Coconut cream/milk and bring to gentle simmer.

Serve with hot crusty bread, rice or noodles.
